Strawberry Cheesecake Salad



Today's strawberry recipe is another delicious salad that could also double as a dessert.  It is light and sweet and creamy.  I served this as a dessert after a bar-b-que one evening and my kids ate every last drop.  I think I'll take it to our Mother's Day potluck this weekend.  

One note about this recipe.  The the bananas and marshmallows should be added right before serving, but the remainder of the salad can be assembled earlier in the day.

Strawberry Cheesecake Salad
Serves about 10

12 oz. whipped topping
1 small package of cheesecake pudding (just the powder, don't add the milk)
3 (6 oz) strawberry yogurts (I used Yoplait)
1 lb fresh strawberries, sliced
3 bananas, sliced (add just before serving or they brown)
miniature marshmallows (add just before serving)

Thaw whipped topping and in a large salad bowl stir together whipped topping, yogurts, and pudding powder. Let this set up in the fridge for at least an hour before serving. Wash and slice strawberries. You can add strawberries to salad or wait to add them with sliced bananas and marshmallows just before serving. Keep refrigerated.

  6. Made this for dessert. Of course I didn't measure my yogurt and just eyeballed (also used vanilla since it's my favorite).
    It was AWESOME!

  17. Made this for a church event and everyone loved it. I made a double batch and the bowl was empty half way through the line! I over heard many people talk about how good it was and there was A LOT of food there to chose from! I love that's its a fast easy side dish so in a pinch you can just whip it up. Oh, wanted to let you know I found it on Pinterest. This is becoming a regular around here!

  19. This sounds so good! I think I will use it for a bridal shower this weekend, and serve it in miniature cups of some kind, with graham cracker crumbs in the bottom and maybe sprinkled on top too.

    2. It was a hit! Because I was using mini-cups (just a little bigger than a shot glass, about 2-3 bites worth) to serve in, I cut the marshmallows in half, then diced the strawberries and the bananas, and also rinsed the bananas in lemon juice to keep them from browning so I could make it a little bit ahead of time. Even the next day, the bananas aren't brown (not that there was very much left!)

    1. I didn't measure the marshmallows, I just eyeballed it until it looked good. I'm thinking it was about 2 cups.

    1. You really need the fresh berries for this recipe. Frozen berries would be too soft and give you texture problems. Sorry!

  23. I made this for Thanksgiving and could not find fresh strawberries in town. I used the whole frozen strawberries and let them drain for an hour and cut them up. Everyone loved it and was all gone by that evening. Will be making it again that way for Christmas. Will try with fresh strawberries when they are in season.

    1. I don't see any reason greek yogurt wouldn't work. The salad may be a little thicker is all. Let me know if you try it.

    1. It would certainly be worth a try and I don't see any reason it wouldn't be tasty. I'd be sure to whip the cream so it about a thick as yogurt. I'd love to hear how it works if you try it.

I left out the bananas because it tasted just like strawberry cheesecake without them but I'm sure the bananas are also good. Will have to try that next time. :) Thanks!
