Best Ever Hot Cocoa Mix


The only reason I love winter is because I love hot chocolate.  In fact, I think winter's only purpose may be so we can drink hot chocolate.  And with all the delicious recipes out there there's no reason to settle for the same old hot cocoa mix, or to settle for the over sugared mixes you buy in the store.  Homemade cocoa lets the chocolate flavor really shine through and you can customize it to your tastes.

When I make hot chocolate, I always use milk.  I know there is powdered milk in every mix, but I love the creaminess that making it with milk adds.  Sometimes when I want it really creamy I'll use half and half or add a couple of tablespoons of heavy cream.  I know, I'm BAD!

This mix is great because it can be made ahead, stored in an airtight container and made whenever you want it.  I'm including a bonus variation of this recipe.  It is a Raspberry Hot Cocoa Mix and is made with raspberry gelatin.  It has just a hint of raspberry flavor that is really nice. 

Best Ever Hot Cocoa Mix
Serves about 20

3cups  nonfat dry milk 
2cups  confectioners' sugar 
1 1/2cups  Cocoa powder
1 1/2cups  white chocolate chips 
1/4teaspoon  Salt

Combine ingredients in large bowl. Working in two batches, pulse ingredients in food processor until chocolate is finely ground. Store in airtight container for up to 3 months. To make hot cocoa, stir 1/3 cup of this mix into 1 cup of hot milk. Top with whipped cream or mini marshmallows.

Variations:  For peanut butter hot cocoa, replace the white chocolate chips with peanut butter chips.

Raspberry Hot Cocoa Mix
Serves about 20

3cups  nonfat dry milk 
1 1/2cups  confectioners' sugar 
1(3-ounce) box raspberry gelatin 
1 1/2cups  cocoa powder
1 1/2cups  white chocolate chips 
1/4teaspoon  salt
