Italian Roasted Tomatoes
These tomatoes are absolutely delicious! My children loved them and they are a simple and beautiful side dish. Normally when I make these I use a fresh basil leaf on each tomato slice, but since my basil plants have gone the way of the dodo, I made due with dried basil. This is a great way to use your extra garden produce.
Italian Roasted Tomatoes
Garden fresh tomatoes, sliced thick (at least 1/2" or 3/4")
Sliced mozzarella cheese
Shredded Parmesan cheese
Fresh basil leaves (or dried basil)
Olive oil
Kosher salt
Place sliced tomatoes on a baking sheet. Drizzle with olive oil and sprinkle with kosher salt. Top each tomato with sliced mozzarella, shredded parmesan cheese and basil. Place under the broiler utnil the cheese is melted and tomatoes are hot. Serve immediately.
***To give these more of a Mediterranean flavor add some chopped Kalamata olives on each tomato slice.
